Budaejjigae (Korean Army Stew)

About the Recipe

Korean Army Stew is basically kimchi jjigae on steroids -- you can add however much of anything you want to the pot and it'll taste delicious every time.

Ingredients

  • 2 cups leftover/old kimchi

  • 1/2 onion


  • 1/2 can pinto beans

  • 1-2 packs ramen noodles and ramen soup packets

  • Protein ideas: Spam, pork belly, firm tofu, sausage (as much as preferred)


  • Additional ingredient ideas: Dduk (ricecakes), Korean fish cakes, mozzarella balls, bok choys, mushrooms, bean sprouts

Steps

Step One

In a large, wide pot, boil about 3 cups of water over medium heat. Then, add the kimchi, roughly-chopped onions, and protein(s) (Spam, pork belly, tofu, etc.) and give it a good stir.


Step Two

After letting the mixture cook for about five minutes, add in the canned baked pinto beans and ramen soup packets.


Step Three

Finally, add ramen noodles and cook for another 2-5 minutes, depending on how al-dente you like your ramen noodles.


Step Four

Ready to serve! Set the pot in the middle, gather around with friends and a bunch of bowls, and dig in!
