Dubu Kimchi (두부김치)

About the Recipe

This dish was one of my favorites growing up -- the combination of cold sliced tofu and warm kimchi stir fry is absolutely perfect. Typically, this dish has pork in it -- however, you can definitely choose not to add it! Another great pairing is Spam. It's a great, delicious way to use leftover pork belly and kimchi!

Ingredients

  • 1/3 block of firm tofu

  • 1 cup kimchi

  • 1 tsp minced garlic

  • 1/4 tsp salt

  • 1/2 tbsp sesame oil

  • 1/2 tsp sugar

  • Optional: sesame seeds, 1 tsp gochugaru (Korean chili flakes), leftover cooked pork belly, or Spam


Steps

Step One

Heat a pan over medium heat and add about half a tablespoon of cooking oil. If adding pork or Spam to the dish, add to the pan first and cook until slightly browned.


Step Two

Add kimchi to the pan, as well as the minced garlic, salt, sesame oil, sugar, and gochugaru (if adding).

(1 tsp minced garlic, 1/4 tsp salt, 1/2 tbsp sesame oil, 1/2 tsp sugar, 1 tsp gochugaru)


Step Three

Stir until kimchi begins to slightly brown.



Step Four

Turn off the heat once kimchi begins to brown/slightly crisp up. Slice up the tofu into equal bite-size blocks and plate with the stir-fry. Optional: drizzle a bit of sesame oil over the tofu and add sesame seeds to the top of the stir fry as garnish. Best way to eat: Top a block of tofu with a heaping of stir fry and eat it all in one bite. Omnomnom enjoy!
