About the Recipe

Compote is just a method of creating a fruit-based jam or filling and can be customized beautifully with different types of berries. The consistency of your compote also depends on how much corn starch you put in, so keep in mind what you want to use the compote for when determining the consistency you want!

Different ideas for use are: fruit tart fillings, mixed in oatmeal, drizzled on pancakes, baked into muffins or cookies, incorporated with milk to create a sweet berry latte -- the possibilities are endless!

Ingredients

  • 1 cup chopped fruit of choice (works well with raspberries, strawberries, and cherries)

  • 1 tbsp agave syrup, honey, or maple syrup

  • 1 tbsp lemon juice

  • 1 tbsp corn starch (add more depending on consistency desired)

  • Optional: 1 tsp vanilla extract, and/or 1 tsp ground cinnamon (for a slight twist of flavor)

Steps

Step One

Place a small pot on the stovetop over medium-low heat. Add chopped fruits to pot and wait for juices to come out of the fruits, stirring every now and then.

Step Two

When the fruits start to become mushy, add in the sweetener of choice (I use agave syrup or honey) and lemon juice. Mix over low heat. Then, allow to simmer.

Step Three

Once the mixture begins to bubble, turn off heat and add in cornstarch. Mix thoroughly until the texture becomes as desired.
