About the Recipe
Seoul, Korea is known for its streetfood -- and a classic king among this genre is the Gilgeori Toast. There are so many variations of the toast, from sugar-coated savory combinations to simple egg-and-cabbage action. My favorite is just that -- simply egg, cabbage, and a couple other flavorful additions that can never go wrong. It's a yummy sandwich that brings so much comfort, warmth, and nostalgia to me with each bite. Feel free to customize as always :)

Ingredients
2 slices of bread
1 tbsp butter
2 large eggs
1/4 cup milk of choice
1 tsp garlic salt or regular sea salt
Ground pepper (to taste)
1/2 cup chopped cabbage
1/4 cup chopped green onion
1/4 cup diced red onion
1/8 cup diced carrot
Optional: 1/4 cup sliced ham, turkey, Spam, or sausage
1 tbsp Ketchup
1 tbsp Kewpie mayo
1 tablespoon olive oil / vegetable oil
Steps
Step 1:
Add a thin slice of butter to a heated pan and spread around. Place both slices of bread on pan and toast each side to the desired toastiness. Remove from pan.

Step 2:
Prepare the vegetables (chopped cabbage, carrots, green onion, and red onion). Whisk the eggs and milk together in a small bowl. Add salt and pepper. Add in the vegetables and stir until mixture is evenly combined.
(2 large eggs, 1/4 cup milk, 1 tsp of garlic salt, pepper, 1/2 cup chopped cabbage, 1/4 cup chopped green onion, 1/4 cup diced red onion, 1/8 cup diced carrot)
Step 3:
Drizzle olive oil in a heated pan (medium heat). Pour the combined egg mixture into the pan, and use a spatula to quickly begin pulling the egg mixture inwards to create a rectangular shape (around the size of the toast). Optional: place slices of ham/turkey/spam/sausage on top of the egg as it cooks.

Step 4:
Once both sides of the egg mixture are well-cooked, spread the Kewpie mayo on one side of a toast. Place the egg on top of that toast, and spread the ketchup on top. Place the second piece of toast on top. Plate and enjoy!
