Shrimp Tacos

About the Recipe

This is actually the dish I serve my family the most when I want to make a fail-proof, tasty lunch for them. The melted Havarti cheese on top of the tortilla is my 'secret ingredient'!

Ingredients

  • 10-15 small shrimp, spines removed

  • 2-3 mini bell peppers, thinly chopped

  • 1 cup Lettuce, chopped

  • 1/2 tbsp chili oil (I get mine from Trader Joe's!)

  • 2 tsp paprika

  • 1 tbsp lemon juice

  • 1 tsp of garlic salt

  • Ground pepper to taste

  • 2 slices of Havarti Cheese (or cheese of choice)

  • 2 tortillas of choice

  • 1 tbsp vegetable cooking oil

  • Optional: Diced tomatoes, red onions, salsa

Steps

Step 1:

Place oiled pan over medium heat. Stir-fry chopped bell peppers with garlic salt, ground pepper, chili oil, and paprika until cooked. Set aside in a small bowl.

(2-3 mini bell peppers, 1/2 tbsp chili oil, 1 tsp garlic salt, ground pepper to taste, 2 tsp paprika)



Step 2:

Add shrimp to same pan, along with the rest of the chili oil, garlic salt, ground pepper, and paprika. Then, once shrimp is cooked, add a splash of lemon juice and stir fry until shrimp is slightly golden. Remove from heat and set aside in a small bowl.



Step 3:

Heat a tortilla over the pan. (If there's no oil in the pan left over, add slightly more.) Flip tortilla over after thirty seconds and then place one slice of cheese of choice on top of the upwards facing side. Then, once cheese is slightly melted, add some of the cooked shrimp and bell peppers on top of the cheese slice. After 30 seconds, remove entire tortilla and contents from heat. Repeat for rest of tortillas.


Step 4:

Add chopped lettuce to each taco. Serve with salsa or diced tomatoes.
